500g of rainbow carrots peeled and chopped equally sized chunks
1 tablespoon sesame seeds
1 tablespoon maple syrup
1/2 tablespoon olive oil
Salt and pepper
Juice of half a lemon
Preheat the oven to 200 degrees C.
Steam the carrots for 5 minutes and allow to cool.
Toss with olive oil and tip onto a shallow baking tray lined with non-stick baking parchment.Roast for 10 minutes and then add the maple syrup and sesame seeds.
Roast for an additional 5 - 10 minutes or until tender and slightly caramelised.
Tip into a serving dish and squeeze over the lemon juice before serving.
